CHICKEN OR TURKEY VEGETABLE SOUP....A FAMILY FAVORITE!


Well....Old Man Winter seems to want to linger......
I know many of you are wrapped in PJ's this morning
gazing out the windows at your winter wonderland!
Perhaps it's a good day to make a big pot of
homemade soup!
This has always been a family favorite that I make
with leftover turkey during the holidays,
but it's marvelous with a chicken roaster too!

ESTELLE'S CHICKEN/TURKEY VEGETABLE SOUP
1 roasted chicken, deboned and cubed
or
left over turkey, cubed
8 red russet potatoes, diced
2 cups carrots, cubed
2 cups corn, or 8 small ears
2 cans peas, drained
1 can diced tomatoes
1 can tomato paste
1 jar spaghetti sauce
2 Bay Leaves
Salt and Pepper to taste
2 T. sugar


Fill a stock pot with 6 cups water.
Add vegetables and chicken or turkey.
Bring to a boil and simmer about 1 1/2 to 2 hours
until potatoes are tender.
Add tomato paste and spaghetti sauce.
Add Bay Leaves.
Season to taste and simmer for one hour!
Serve with hot buttermilk cornbread.

    1. Yes Deb...the sugar cuts down on the tartness of the tomato paste!

  6. Looks so good, Betsy!! How is the weather in Texas? We can't BELIEVE how cold it is here in N.C. today (and yesterday). I checked the weather online this afternoon about 4:30; it was 35° and with the wind chill factor it was 24°. Brrrr!
