COCOWHIP STRAWBERRY SHORTCAKE....A PERFECT SUNNY DAY TREAT!


Y'all are seriously going to LUV this!

But first up...
breaking news........

the sun is shining today....no rain!
Whoop! Whoop!



Our dearest Greg and Jenn introduced us to this oh-so-delicious CocoWhip last weekend!
It is the taste of creamy dreamy, yet delicate taste of coconut in every spoonful.....


2 Tablespoons of CocoWhip 30 calories, 2 grams of fat, and 2 grams of sugar
CocoWhip Topping is dairy-free / non-dairy, egg-free, gluten-free, grain-free, 
nut-free, peanut-free, soy-free, vegan, and vegetarian.

What could be a more perfect taste of summer
than a strawberry shortcake made with
homemade buttery shortcakes,
filled with CocoWhip, fresh berries
and 
topped with sprinkles of toasted coconut! 




ESTELLE'S EASY SHORTCAKES
2 1/3 cup Pioneer or Bisquick baking mix
1/2 cup milk
3 T. sugar
3 T. butter, melted

In a medium mixing bowl, combine all ingredients and mix well.
Drop by large spoonfuls onto a baking sheet.
Sprinkle tops with a dusting of sugar.
Bake for 10-12 minutes
at 425 degrees F. 
This recipe will make 6 shortcakes! 

You can probably find CocoWhip at Whole Foods or Sprouts....
or in the frozen ogranic dairy section of your grocery store!

  3. OMG! that would be great for my granddaughters--they're lactose intolerant! That dessert looks so good that if it weren't raining, I'd be heading to the store.

    1. It's in the organic freezer section of the grocery Susan. When you are ready to serve it, place the carton in the fridge for a bit, but then place it back in the freezer when not using. Otherwise, it will melt..just a little tip! It's absolutely scrumptious!

  4. Oh My......putting this on menu for next Thursday when the girls come over for lunch. sure hope I can find that.....weird that I've never seen it. I LIVE in grocery stores!!

  5. I am LOVING the sunshine and DRY conditions!!!! ALL our carpet is now DRY!!!
    I have never heard of this CocoWhip but I AM going to Fort Worth in the morning - for the first time in WEEKS AND WEEKS! - and BOTH of those stores are near where we will be! I shall take my insulated bag!
