THE PERFECT CHOCOLATE CUPCAKE! and AN ATLANTA ANNIVERSARY!



You may have noticed that cupcakeries are springing up everywhere! Sprinkles has been around for some time here in Dallas, and it became quite the place "to go" for birthday celebrations and just to enjoy a sweet bite of cake. They must love their products since they are rather pricey for a cupcake, averaging $7.00 to $12.00 per cupcake! In fact, we have a new speciality bakery which just opened their doors very close to our neighborhood. So....why not set out to bake our own bakery worthy cupcake? I do believe these will please the most discriminating palate! And.....we begin with  a boxed cake mix. 


You can dress up a boxed cake mix with the addition of a few ingredients, such instant pudding mix, sour cream and an extra egg. Choose any flavors you wish. Today, Estelle's selected a German Chocolate mix as it's a very light chocolate flavor. They baked up beautifully! These were delicately frosted with a rich buttercream and topped with sprinkles! Now....take a bite....you know you want to! 



THE PERFECT CHOCOLATE CUPCAKE
1 box German Chocolate cake mix
1 package of instant pudding mix, vanilla or chocolate
1 cup sour cream
4 eggs
1/2 cup milk
1 t. vanilla

Preheat oven to 350 degrees F. In a mixing bowl, beat together all ingredients. The batter will be a little thick. Prepare your muffin tin with liners. Divide the cake mix batter evenly among each tin, filling 3/4 full. Bake for 8-10 minutes, until the top lightly springs back from a light touch. Cool before frosting.

DELICIOUS BUTTERCREAM
1/2 cup butter, softened
3 cups powdered sugar
1/8 to 1/4 cup whipping cream
1 t. vanilla

Soften the butter to room temperature. In a mixing bowl, add the powdered sugar. cream and vanilla and beat until creamy. Frost the cupcakes and top with sprinkles!
