BREAKFAST CINNAMON COFFEE CAKE....SLOW COOKER STYLE

This is my first attempt to "bake" a cake
in the slow cooker.
I would say.....we all LOVED IT!
This is a huge time saver and tasted
bakery worthy!

BREAKFAST CINNAMON COFFEE CAKE..SLOW COOKER STYLE
3½ c biscuit baking mix, divided
1½ c sugar
1 c vanilla yogurt
(may substitute sour cream)
2 eggs, beaten
2 t vanilla
½ c brown sugar, packed
1 t cinnamon
1 c powdered sugar
2-4 T milk

Spray the inside of your crock pot with cooking spray.

Spoon 3 cups of biscuit baking mix, sugar, sour cream( or yogurt), eggs and vanilla in a bowl and mix well.

In a separate bowl, mix together your remaining 1/2 cup biscuit baking mix, cinnamon and brown sugar.

Spread half of the batter in the bottom of your crock pot. Cover with half of the brown sugar mixture. Spoon the remaining batter on top of the sugar mixture. End with the remaining brown sugar mixture

Cover and cook on high for 1½ - 2 hours until the cake springs back with a gentle touch in the center. Take a rubber spatula and run around the edge of the cake to separate the cake from your crock pot. Allow to cool for about 15 minutes. I sliced the cake evenly while still in the crockpot. Then placed each slice on a serving plate, then drizzled the glaze on before serving.

For the Glaze......Mix together your powdered sugar and enough milk to make a drizzle over the warm coffee cake.

  5. This looks amazing!! I have never baked anything in my slow cooker, but this is one I want to try. I have a question. In the list of ingredients you list yogurt but in the directions you call for sour cream. Are they inter-changeable.... use one or the other ? Just want to be sure before I make it!! Thanks for sharing the recipe!!!!

  6. Hi Chris! Thank you for your question! Yes, I used sour cream instead of yogurt. You may use either in this recipe! I would use plain yogurt as the cake is rather sweet. Thank you for this and hope you enjoy the recipe! So love having you visit today!

    1. Good Morning Cathrin. No, I have not made this as an overnight cake. I am not sure how that would turn out. Crockpots can vary on their heat....I am going to say this is probably best served immediately after baking the first time.
