STRAWBERRY RHUBARB CUSTARD PIE....SEMI-HOMEMADE


It's as good as it looks......
What a lovely way to begin the summer!


Some of the VERY best recipes can be found
on the back of the can or the box!
I know you already know this if you have been
baking and cooking as long as I have.
Today I noticed a delicious pie recipe
from the back of a Lucky Leaf can
of Strawberry Rhubarb Pie Filling!
I had a pint of fresh strawberries I needed to use,
so I thought, 
"why not marry the two together!"
The result was absolutely beautiful and delicious!
So good.....
we had pie for breakfast!! 


STRAWBERRY RHUBARB CUSTARD PIE
1 package of store bought 8-inch pie shells, unbaked
1 21-ounce can of Strawberry Rhubarb pie filling
1 pint fresh strawberries, washed and sliced
8 ounces of sour cream
3/4 cup sugar
1 egg
2 T. flour
2 t. vanilla


Preheat oven to 375 degrees F.
Lay one unbaked crust into pie plate which has been sprayed with
cooking spray.
Spoon pie filling over the unbaked pie shell.
Lay fresh sliced berries over the pie filling.
Mix the sour cream, sugar, egg, flour and vanilla in a mixing bowl.
Pour this custard filling over the berries and pie filling.
Cover with second pie crust,
Cut slits into the top for steam to escape.
Place pie plate on cookie sheet and bake
at 375 degrees for 35-45 minutes until golden brown!

  1. Ahhhh yes, we were both into rhubarb, this weekend!!!!!

    And this custard style, sounds delicious, of course.

    But now, I am going to be *naughty*.... -blush-

    And ask......

    How does a true Southern baker, use store bought pie crust????? Won't you get drummed out of The Sorority Of True Southern Bakers, or something???? >,-))))

    1. I think a strawberry rhubarb pie may be THE best fruit pie ever! Now, Miss Tessa...this is a true confession....I cannot produce a good homemade pie crust, nor can I serve a delicious fried chicken! I have both on my bucket list to strive to do better! I am not sure any of my sorority sisters could bake...perhaps they were fearful of getting a little flour dust on their pearls....and....damn yankess can be quite loveable!!!!

  2. You are so right, Betsy, Life is good when eating pie! I too have found great recipes on the backs of cans, boxes, etc. I made my grandson's birthday cake from the back of the Hershey's Cocoa can! It was great. Your pie must be a winner. Have a beautiful afternoon. ♥
