TEXAS CAVIAR FOLLOWED BY GERMAN CHOCOLATE CAKE....BIRTHDAY WISHES!


There's a birthday party in the near future....
Son # 1 turns....thirty something.......
It's time to bring out some family favorites to add to the celebration!
If you're going to a party,
then take your BEST of the BEST!
Today is all about
Estelle's Texas Caviar 
and
semi-homemade
German Chocolate Cake! 


Many of us have our favorite recipe for
Texas Caviar
or often times referred to as
Cowboy Caviar.
I tweaked my recipe over and over until 
the results were described as
"THE most delicious ever!"


Now, feel free to change up the ingredients to your liking...
that's the thing about this recipe that makes it so versatile and easy to prepare!
Here is Estelle's version.....

TEXAS CAVIAR
1 can black beans, drained and rinsed
1 can red kidney beans, drained and rinsed
2 cups frozen corn, thawed
1 fresh avocado
2 cups mini San Marzano tomatoes, chopped
1/2 small red  onion, diced finely
1/2 fresh red pepper, diced finely
1 fresh jalapeno, diced finely
1/4 cup fresh cilantro
1 fresh lime
1/2 t. cumin
1/2 t. chili powder
1/2 t. salt
Zesty Italian dressing...add to taste (1/8-1/4 cup)



Add all ingredients in a large mixing bowl. Stir gently to combine. 
Chill for 30 minutes, covered.
Best when served immediately!
Serve with assorted chips. 


This is a classic recipe from Texas!
We eat it by the spoonfuls!!!

ESTELLE'S SEMI-HOMEMADE
GERMAN CHOCOLATE CAKE



There is a great way to take a basic cake mix
and
turn it into a bakery worthy cake!

Here are your list of ingredients...
1 box cake mix
1 1/4 cup milk
1 cup melted butter
4 eggs

Mix together. Bake according to package directions. Frost as desired.

Essentially, you add 1 additional egg according to package directions.
Substitute MILK for water.
Substitute butter for vegetable oil
and
double the amount called for.

The results are a prize winning cake!



I think it promises to be a great celebration!

  4. Hi Betsy and a happy birthday to your handsome son! Oh, now I'm just a droolin' seeing that German Chocolate Cake! That is my absolute favorite. Before my little mother passed away, she would make me a German Chocolate Cake from scratch! I have to admit the box version is really good but next time I make one I'll do it like you. I have the cake box and frosting in my pantry! :)

  6. I like your Texas Caviar recipe and will try it this weekend! My hubby would love the German Chocolate cake, but me not so much. I don't like coconut. I know, I must be the only person in the world who doesn't like it :-(

    Your Texas Caviar looks delish; I really love this stuff! We have a somewhat different version here in North Carolina, but same general idea. ;) Amazingly, I'm not a fan of German Chocolate cake, but my husband and my mom love it. I think it's the coconut that I don't care for. I love your tips for enhancing a boxed cake mix, though. I'll definitely have to pin that.
