VEGETABLE FRITTATA


“Don’t Get Your Feathers Ruffled…
Just Give Me A Peck on the Cheek!”


 
It's a Hen Party! You know those sweet cows who are always saying, "Eat More Chicken!" Well, we've had enough! We are not going to take it anymore! Our new slogan....."Eat more veggies and leave us chickens alone!"



 
VEGETABLE FRITTATA
2 T. butter
8 eggs
1 large sweet potato, peeled and cut in slices
2 sliced zucchinis
1 sliced red bell pepper
2 T. fresh parsley
Salt and pepper to taste

 
Heat a pan over a medium-low heat.
Add the butter and sweet potato slices and cook until soft, about 8 minutes.
Add the zucchini and red bell pepper slices and cook for another 4 minutes.

 
While it cooks, whisk the eggs in a bowl until light and fluffy.
Season the egg mixture with salt and pepper and add to the cooking vegetables.

 
Cook on low heat until just set, about 10 minutes.
Finish the frittata until golden under a heated broiler.
Cut the finished frittata into wedges and serve with fresh parsley!

  7. I love chicken. I love chicken's too and would love to have a place built to have a few outback. I found the sweetest little chicken coop..anyway..I can't give up chicken. It's my favorite meat. I'm soooo sorry.
