A Wonderful Taste of Your Summer Harvest


 Come on in and visit...we know you'll find something you'll like!! Local summer farm stands often offer a plethora of gardening items that normally include seasonal flowers and locally made products. This was our favorite produce market while living in Maine. We would stop on our drive up to Cape Elizabeth and Prouts Neck, usually on a Saturday or Sunday and pick up homemade pies, Amish Butter and the most delicious summer fruits and vegetables. This corn and tomato stew made a fresh- tasting summer dinner for us and I always served it with some hot and buttery homemade cornbread. My Daddy loved this summer stew and of course, it was one of my mother's winning recipes!

We always marveled at how green summer was in Maine! Did you notice the good luck horseshoe they had attached to their fence? Love that!

Now, it's time for dinner!!


Fresh Corn and Tomato Stew
3 ears of fresh corn
3 ripe fresh tomatoes (about 1 ½ pounds)
1 cup of fresh okra
1 T. butter
¼ cup chopped green onions (including the green part)
1 clove garlic, finely chopped
1 t. salt
½ t. pepper
1 t. sugar
1 T. minced parsley


Prepare the fresh vegetables, cut the corn kernels from the cobs and scrape the cork milk from the cobs. Stem the tomatoes and cut them into small cubes. Wash the okra and thinly slice. Set the vegetables aside. In a heavy skillet, melt the butter over medium high heat. Add the onions and garlic and sauté until wilted, about 5 minutes. Add the corn, tomatoes, okra and all remaining ingredients. Reduce heat to low, cover and cook for 15 minutes. Ready to serve with some good homemade, hot cornbread!

  1. Girl, you made me hungry now for cornbread and of course the okra! Maine, so cool and green... out kids visited a few summers ago and haven't quit talking about it. On my bucket list!
