ASIAN CHICKEN SALAD WITH CILANTRO VINAIGRETTE

Spring is the perfect season to greet the day with a peaceful cup of

morning tea and sit on the porch, patio or deck and just listen

to the birds sing, and enjoy all the glorious things this special season

has to offer us.

I find it the best time to host an intimate gathering for family or friends

at a table arranged on a bright and airy sunporch....before the summer

heat rolls in....and I found the best ever recipe for y'all to try!

This Asian Chicken salad is so light and refreshing....

it would be perfect for the ladies that love to lunch...

along with a sparkling glass of Hard Seltzer Rose'!

I have just loved the Spring edition of

Entertain and Celebrate magazine

which is chocked full of recipes and fresh ideas for Spring.

This is the recipe I chose to make for this special luncheon today.

Asian Chicken Salad with Cilantro Vinaigrette and

Sesame Wonton Crisps

Olive Oil, Seasoned Rice Vinegar, fresh garlic and fresh Cilantro

Wonton Wrappers, brushed with Olive Oil and

sprinkled with Sesame Seeds..baked until lightly golden

Seasoned roasted chicken breasts tossed with

sweet chili sauce

To save time, you could use a Rotisserie chicken from the market

The color is just beautiful....

crisp Romaine, mixed with red cabbage, carrots, red pepper and edamame

A lovely heart healthy salad

We served this with the new Truly Hard Seltzer Rose'

White Claw has a very good similar Rose' too!

Who doesn't enjoy bubbles at their luncheon?

This is so pretty and light!

To serve, place four crispy wontons on each plate

with the salad serving spooned into the middle of the plate!
