TOMATO-ONION JAM



Hello Loves.....
this little recipe is going to add SO much flavor to
your burgers this spring and summer.
If you are like our family,
we love having family gatherings and enjoy
a big cookout for the warmer months.
Even if you are among those who
do not like onions, I believe this recipe
may make you a fan.
This recipe if enough for 2-4 people
so if you are serving more, simply double the recipe.

TOMATO-ONION JAM
1 roma tomato
1 red onion
2 cloves of garlic
1 t. balsamic vinegar
salt and pepper to taste
drizzle of olive oil
1 t. sugar


Core, seed and dice the tomato. 
Peel, halve and thinly slice the onion.
Wrap the garlic cloves in foil, 
sealing to make a little pouch.
Roast the garlic in oven until soft, about 20 minutes.

Heat a drizzle of olive oil in skillet 
over medium heat.
Add onion and cook, tossing until softened
about 4-5 minutes.
Season with salt and pepper.
Stir in tomato, sugar and vinegar.
cook 4-5 minutes until all are softened
and well combined.
Stir in mashed roasted garlic.
Remove from skillet
and you are ready to serve over your burgers.
