Company's Coming!
This means there better be a kitchen stocked
with homemade goodies!
I know that many of you, including our family
absolutely love carrot cake, so the
occasion calls for my favorite recipe of all for this particular visit!
RECIPE HALL OF FAME CARROT CAKE
1 1/2 cups of oil
2 cups sugar
2 1/2 cups flour
2 t. baking powder
1 t. baking soda
1 t. salt
2 t. cinnamon
4 eggs
2 1/2 cup grated carrots
1 cup crushed pineapple
(20- ounce can, drained)
(20- ounce can, drained)
2 t. vanilla
Combine the oil and sugar; mix well.
Sift dry ingredients, mix alternately with eggs,
(one at a time) to the oil and sugar mixture.
Add carrots, drained pineapple and vanilla.
Mix well.
Bake in greased cake pans @ 350 degrees F. for 35-40 minutes.
Cool before frosting.
Cream Cheese Frosting
1 (8 ounce) block cream cheese, softened
1 stick butter, softened
2 t. vanilla
2 1/2 cups powdered sugar
Combine soft cream cheese and butter.
Blend in powdered sugar and vanilla.
Spread on cooled cake.
