CABBAGE AND NOODLES WITH SMOKED KIELBASA

Fall is here in all her glory.
With each passing day, the sunsets are more glorious and the night comes earlier.
The trees are showing their vibrant fall colors.
It is indeed a marvelous time of year which so many of us love.
Autumn dinners become more rustic and this Hungarian dish
always is a fall favorite at Estelle's.
It's quick to prepare with few ingredients.
Our love affair with Autumn is always one to remember!


1/2 Yellow Onion (chopped)
1/2 Head Green Cabbage, chopped in large pieces
2 tablespoons Grainy Mustard
1 Lb. Egg Noodles
3 tablespoons Parsley
2 tablespoons Olive Oil
Salt and Pepper
2 tablespoons Butter
1 Smoked Kielbasa, cut in pieces


In a large skillet, melt butter and olive oil together. Add the smoked sausage and allow to cook through, about 7-10 minutes. Add the cabbage and onion and infuse with mustard and all seasonings. Cover and allow to steam, stirring occasionally. Continue to steam until cabbage and onion are somewhat wilted, about 20 minutes. Add the noodles, cover and about 1 T. water….continue to steam, stirring in noodles until el dente. Serve immediately!

  2. Are the noodles uncooked when you add them to the recipe? This looks and sounds real good. I like the idea of the mustard- I know that probably adds a nice flavor.

    1. Hi Liz! Yes, the noodles are uncooked when you add them to the cabbage with a little water, cover and continue to steam or simmer until the noodles are done! Hope you enjoy the recipe!

  4. another rainy weekend in the forecast.....making this on one of those wet days!! My yankee girlfriends are always talking about noodles and cabbage. Seemed like a crazy combo to me but this recipe looks really good!!!
