ALPHABET SOUP FOR A PERFECT FALL DAY!



What's the perfect fall lunch after spending the morning raking up
all those beautiful autumn leaves?
Grilled cheese and a cup of soup....
a favorite for the entire family!



A beautiful October morning of 54 degrees F.
Now how perfect is that?



The Lorapetelum is showing
her regal fall colors!



And...finally....
the Morning Glory decided to bloom!

There is nothing more comforting than
grilled Pimento Cheese on Whole Grain Bread...
Palmetto Pimento Cheese is always
on the menu at Estelle's!

And....
the grandbabies especially love
Vegetarian Alphabet Soup....
It's easy peasy to make and
oh so yummy!


ESTELLE’S HOMEMADE ALPHABET VEGETABLE SOUP
4 oz. alphabet pasta
1 1/2 Tbsp. extra virgin olive oil
¼ yellow onion, finely chopped
1 carrot, finely chopped
1/2 celery stalks, chopped small
2 cloves of garlic, minced
1 (16 oz.) can crushed tomatoes
8 cups water
1 t. basil
1 t. black pepper
1 beef bouillon cube
1 can cut green beans
1 can baby peas
1 russet potato, peeled, diced and cooked separately
1 bay leaf


In a large stock pot, heat olive oil on medium high heat and sauté the carrots and celery for a few minutes.
Then add the onion and the garlic and sauté for a few more minutes.

Add the tomatoes, potatoes, water, salt, pepper, basil, beef bouillon and bay leaf.
Give it a good stir, cover and bring to a boil. Turn to low and simmer for 1 hour. Add the pasta just before ready to serve and allow to simmer until a tad bit underdone. Add salt and pepper to taste. Remove the bay leaf and you are ready to serve this hot delicious soup!


For a sweet ending.....we served up a Pumpkin Spiced White Mocha!
