CHOCOLATE FRIED PIES

 
Is everyone getting ready for a sparkly Fourth of July?
 
 

Speaking of "sparkly".....where in the world did the "sparklers" go to?
I cannot find them anywhere!!!
It's just not the "4th" without our Red, White and Blue Sparklers!


We are planning a family cook-out and lots of swimming!
I believe we are going to hit 96 degrees on Friday.......so.....
ice cold lemonade and watermelon will certainly be on the menu!


One of our very best memories is "eating" at the Canton Flea Market in Canton, Texas! We had a favorite food vendor that served the very best hamburgers and fried pies! Oh my, we took home a few bags of those delicious homemade fried pies...lemon, apple, coconut custard, apricot and oh yes...chocolate!!!! This recipe brings back that little delicious memory!!!

 
 

OAK HILL FRIED PIES
~ Y’all Come Over

 2 cups flour
1 t. salt
1 T. sugar
1/2 cup shortening
1/2 cup milk
Chocolate Filling
Vegetable Oil for frying!
 
In a medium bowl, combine the flour, salt and sugar. Mix in the shortening with a pastry blender until the mixture is crumbly. Add the milk, stirring until the mixture forms a ball. Flatten with a round disc, cover with plastic wrap and refrigerate for 30 minute. Roll the dough into  large circle. Cut into 5-inch circles. Spoon the chocolate filling in the center. Brush the edges with a small amount of water, fold over and press to seal the edges with a fork. Here's a tip....don't make them look perfect...that's the beauty of homemade fried pies....they look more tempting when they look a bit rustic! These are simply incredible!!!
 
 
 
 
Pour the oil into a large skillet to measure 1/2 inch. Heat over medium heat. Add three pies at a time, cooking until golden brown on each side. Drain on a paper towel. Continue until all the dough and filling has been used.
 
 
 
 
CHOCOLATE FILLING
6 1/2 T. sugar, divided
10 t. cocoa powder, divided
6 1/2 t. butter, softened and divided
 
Sprinkle each pastry round with
 2 t. sugar,
1 t. cocoa powder and
 2 t. butter before folding over.
