WEEKNIGHT PORK CASSEROLE




 GATHER around the TABLE


Lovely Autumn! Yes, it came knocking at our door. Leaves are falling, temperatures fell into the 50's and that cold rain is misting the lawn.....such a memorable time of year. As we gather around our tables, our senses are filled with the hearty aromas of dinner cooking and candles burning. Our hearts take us back to our childhood and to home. It is here we find our comfort and our peace. We are loved. It's time to start a fire and pour a glass of wine......




WEEKNIGHT PORK CASSEROLE
1 lb. boneless pork loin cutlets
1 sweet potato, peeled and thinly sliced
1 Fuji apple, peeled and thinly sliced
1 medium onion, peeled and thinly sliced
1 cup apple cider
1 t. cumin, divided
Salt and pepper to taste
Olive oil cooking spray


 Preheat oven to 350 degrees F. In an ovenproof skillet, spray liberally with olive oil cooking spray. Heat skillet to medium high heat. Season pork cutlets with salt and pepper. Sear both sides to seal in juices. Turn off the heat, then layer the sweet potatoes, onion and apples over the pork, seasoning each layer with salt, pepper and cumin. Pour apple cider over the top and cover, Bake for 45 minutes. ~Georgia Governors Mansion
