Let's Start the Day Out Great....

I promise....this is going to be well worth your time!



School bells are ringing...again...seems so early doesn't it?  Those cute little pictures are popping up everywhere reflecting the smiles of children showing off their new clothes, haircuts, backpacks and those darling little new shoes! All parents want their children to have positive school experiences and sending them off with a good, hearty and healthy breakfast can be probably one of the most beneficial ways to begin their day. Everyone is more alert, thinks better and has more energy when they include colorful, healthy food before heading out the door!


Even though you think you may not have time to set the breakfast table or make homemade "anything"....think of these tips to organize your breakfast meals. Set the table the evening before, prepare as much as possible ahead of time and be "up and at em'" before your children arise so you can welcome them into the kitchen and lure them to the breakfast table without feeling rushed! Remember that little saying your parents told you..."Early to bed, early to rise....makes a man healthy, wealthy and wise!"


Fresh Berries....




Apple Cinnamon Oatmeal Casserole

2 cups half-and-half
1/4 cup brown sugar
1 T. butter
1/2 t. salt
1 cup quick-cooking oats
2 T. cinnamon
1 cup peeled and chopped apple
1/2 c. chopped dried apricots
1/2 cup raisins
2 T. dried cherries
Cinnamon-Oat-Nut Topping

Preheat oven to 350 degrees. Grease a medium casserole dish.

Combine the half-and-half, brown sugar, butter and salt in heavy saucepan over medium heat.Simmer until the butter is melted and mixture is smooth. Remove from heat. Add the oats to the casserole dish and stir in milk mixture, cinnamon, apples, apricots, pecans, raisins and cherries. If this appears dry, add milk to moisten.

Top with Cinnamon-Oat-Nut Topping..

1/4 cup brown sugar
1 T. cinnamon
2 T. chopped pecans
3 T. oats
Butter....dotting the top

Combine all ingredients in small bowl until the mixture has been well combined.

Nothing says lovin' like something from Mom's oven!
