Texas Sunrise!

Keeping with our theme of back-to-school breakfasts, I did not want ya'll to miss out on two more fabulous ideas for preparing your family breakfast menus. These two recipes are" Texas-inspired".......
























Texas Ranger Baked Eggs

7 eggs
2 t. sugar
4 oz. cream cheese, cut in small pieces
2 cups Monterey Jack Cheese
1/4 cup red pepper
1/4 cup green bell pepper
2/3 cup margarine, melted
1/2 cup flour
1 t. baking powder
dash of paprika
dash ground mustard

The night before, beat eggs, milk, and sugar together. Add remaining ingredients and mix well. Spray a 3 quart baking dish with cooking spray and pour mixture into the baking dish. Cover and refrigerate overnight. Bake at 350 degrees for 50-60 minutes.

Texas Apple Enchiladas

8-12 flour tortillas
1 can apple pie filling
1 t. cinnamon
1 8 oz. pkg cream cheese
1 stick butter, melted
2 T. sugar and cinnamon combined

Mix the softened cream cheese and powdered sugar together until smooth. Place 2 T. cream cheese mixture and 2 T. apple pie filling on each of the tortillas. Roll up as you would an enchilada and place in a greased baking dish. Pour melted butter over all. Sprinkle with sugar/cinnamon combination. Bake 325 degrees for 30 minutes.
