Good Morning all you guys and dolls!
As per your request, I am publishing
the recipe for a family favorite for many years...
The Madison County Corn Salad!
This recipe is an original of
Louise Powers, Canton, Mississippi
and was published in my all time favorite cookbook,
Madison County Cookery!
My Mother-in-law made this sooooo many times
when we were visiting over the summer weekends in
Mississippi....she was a marvelous cook and this
delightful vegetable salad was paired beautifully
with grilled pork chops, BBQ chicken or for that matter,
any dinner we enjoyed at their home in Deerfield on a hot summer's evening!
2 cans of whole kernel corn, drained or
2 packages of frozen corn, thawed, which is what I use
1 large cucumber, diced
1/4 to 1/2 small purple onion, diced
1 fresh tomato, diced
1/4 cup mayonnaise
Salt and Pepper to taste
Combine all ingredients, Chill until serving time.
I have served this at room temperature or chilled.
I find it more flavorful if all ingredients are at room temperature
and combine with mayo right before serving.
