SUMMER FRESH GREEK PASTA SALAD

We all love eating a bit lighter
when Summer months are upon us
and 
how delicious does a fresh Greek Pasta Salad sound?
This is a recipe both the Divine Miss M
and I prepared last weekend and
everyone agreed.....this was two thumbs up!
All the ingredients are fresh and healthy....
what a beautiful sight for the senses!

GREEK PASTA SALAD
1 pound FRESH three- cheese tortellini pasta,
cooked according to package's instructions
1 cup cherry tomatoes, halved
1 small shallot, diced
1 cucumber, peeled and chopped
½ cup jarred artichoke hearts
½ cup Kalamata olives
½ cup crumbled feta cheese
Cup packed fresh basil leaves, finely chopped



The Greek Dressing
½ cup extra virgin olive oil
Cup apple cider vinegar
3 teaspoons minced garlic
1 teaspoon dried oregano
1 teaspoon dried basil
½ teaspoon dried thyme
2 teaspoons sugar
1 tablespoon Dijon mustard
½ teaspoon salt, or to taste
Black pepper, to taste
Juice of ½ lemon



Combine all dressing ingredients in a small bowl and whisk until blended.

In a large bowl combine tortellini pasta, tomatoes, shallot, cucumber, artichoke hearts, olives, feta cheese, and basil. Pour dressing over the top, then toss to combine. Serve immediately.

  5. Goodness, I dearly love a good pasta salad and can't wait to put this one together. Like you I like to eat lighter during the summer. Here in N.
