RED BELL PEPPERS....MY NEW BREAKFAST OBSESSION



This is a simple way to add
a tiny bit of color to your morning protein...
along with adding a big boost to your health!


I adore red bell peppers,
so I have started to serve up the family favorite of
"egg on toast" with a red pepper ring
on top of whole grain toast!
Delicious!!!!


So, along with the incredible, edible egg....
how about tossing in a red pepper!


 Red peppers contain more than 200 percent of your daily vitamin C intake
Vitamin C helps the proper absorption of iron

 Red bell peppers are a great source of vitamin B6 and folate. Both these vitamins and minerals can help prevent anemia.

Red bell peppers help support healthy night vision. Red bell peppers are high in vitamin A, which helps to support healthy eyesight, especially night vision. So when it comes to bell peppers, seeing red is a good thing!

Red bell peppers are packed with antioxidants. The combined effects of vitamin A and C create a great antioxidant capacity, and with lycopene in the mix, the red bell pepper becomes a top notch superfood. Lycopene is what makes tomatoes and peppers red. Red peppers are one of the highest veggies in lycopene, which has been shown to help prevent many cancers including prostate and lung

Burn more calories with red bell peppers. They do have a mild thermogenic action that increases our metabolism without increasing our heart rate and blood pressure like the hot peppers do.

  4. I often put chopped green pepper in my omelet ...
    but it has such a stronger flavor than the ripe red of course.
    can't wait to try this beautifully simple and visually beautiful little breakfast of yours!

  5. Lovely breakfast with a boost of vitamins from the red pepper. We eat a lot of them at our house. Love them in salads, pasta sauce and stir fries. My daughter made this breakfast for us one visit. It's yummy. Happy Monday. ♥
