I know I do and will try to find recipes featuring this tart red berry
that will WOW my loved ones!
I have actually combined two recipes
which resulted in this amazingly delicious bread!
The combination of bananas, cold tart cranberries, orange and walnuts
will be a taste full of flavor!
This would be perfect to serve at
Christmas breakfast or brunch
or to even take along as a gift for your next holiday gathering!
Estelle's Cranberry Banana Bread
with
Orange Glaze
1 cup sugar
1/2 cup butter, softened
2 large ripe bananas
1/2 cup milk
1/4 cup fresh orange juice
1 t. vanilla
2 T. orange zest
2 eggs
2 cups flour
2 t. baking powder
1 t. cinnamon
1/2 t nutmeg
1 1/2 cup fresh frozen cranberries
1/2 cup coarsely chopped walnuts
Preheat oven to 350 degrees F.
In a large bowl, cream together the butter and the sugar.
Beat in the eggs. Mix in the mashed bananas, vanilla, milk and orange juice and zest.
Add in the flour, baking powder and spices.
Mix well, but gently.
Fold in the frozen cranberries and walnuts.
Place this mixture in a greased loaf pan.
Sprinkle with a little sugar on top.
Bake for about 50 minutes.
Drizzle with orange glaze while warm.
Cool slightly before slicing.
Orange Glaze
1 cup powdered sugar
1 t. orange zest
3 T. orange juice
Mix together in a small bowl
until smooth.
Drizzle over warm bread

I wish I could get up the urge to bake, cook, get in the kitchen... but alas, that feeling seems to have evaporated into thin air.
