BUTTERSCOTCH PUDDING....AN OLD-FASHIONED FAVORITE!



When the days become shorter and the air is a bit crisp and cool,
nothing can be more perfect than
homemade butterscotch pudding.
One bite of this buttery, rich pudding will
taste like Autumn gave a party......



OLD -FASHIONED BUTTERSCOTCH PUDDING
1/2 cup packed brown sugar

2 tablespoons cornstarch
1/4 teaspoon salt
1 2/3 cups milk
1 egg yolk, lightly beaten
3 tablespoons butter
1 teaspoon vanilla extract



In a medium sized saucepan combine brown sugar, cornstarch, and salt. Stir in milk. Cook over medium heat, uncovered,  for  5 to 10 minutes or until thickened and bubbly, stirring constantly.
Stir about 1/2 cup of the hot mixture into the beaten egg yolk. Return all to the saucepan, stirring to mix well, for another 2 minutes.
Stir in the butter and vanilla until butter is melted. Divide into pretty dessert cups. Cover surface with plastic wrap. Estelle's serves the pudding warm!
