CAJUN SALMON CAKES....THE BEST YOU EVER TASTED!

Summer days can be spent boating, sailing, fishing and swimming!
What can be better than an easy southern seafood dinner
served on your patio or deck after a day of fun!
These Salmon Cakes are SO good y'all!
You are going to want seconds!

Estelle's Best Ever Cajun Salmon Cakes
1 can of Honey Boy Red Salmon
1 can of Honey Boy Pink Salmon
1/4 cup of finely chopped red onion
1/4 cup finely chopped green pepper
2 T. cornmeal
1/2 sleeve of Ritz Crackers, crushed
1 t. garlic powder
1 t. Worcestershire Sauce
1 t. Tabasco 
1 t. Old Bay Seasoning
1/4 cup Mayonnaise (Duke's)
1 egg
1 t. lemon juice
a dash of cayenne pepper


If you are making these for dinner, begin the recipe about Noon.....
Combine each can of salmon, Drain the cans, BUT save a bit of the oil. Flake with a fork in a mixing bowl. Add the onion and green pepper and mix together. Then add the remaining ingredients and mix gently. Cover the bowl with saran wrap and refrigerate for about 4 hours. When ready to prepare, form patties as you would a hamburger....pat together gently. I use Wesson Oil for these. Place each salmon cake in a preheated skillet which you have seasoned with about 1/4 cup of Wesson oil or a good vegetable oil. Brown on low heat on each side. Then place the skillet, covered, in a preheated 300 degree F. oven for 30 minutes. These are SO flavorful, a little crispy on the outside and tender and moist on the inside..just about perfect!!!


You can't get more southern than this....
Salmon cakes, Mac N' Cheese and fresh green beans...
