BANANA SPICE SNACK CAKE AND THE TINIEST SNOWMAN!


Texas snow arrived about 6 AM.
It was sooooooo pretty!


 I know you cannot really determine it's snowing from this 
picture, but I wanted to record the moment it began.


This is when we had a real flurry coming down..big, fat, wet flakes!
I had almost forgotten how beautiful snowfall is.


I love the view of the Greenbelt out of our kitchen window.
The view alone almost sold me on this house. 


 Probably doesn't look like much to our dear friends and family in the North!


There's the puppy!
 He wandered a little further today....progress I think!


It all ended within a few hours.
The sun came out
and the storm
arrived in Atlanta about
1:30 PM.


It proved to be yet another snow day in Atlanta.
Luke and Caden bundled up to play outside and sled,
but it was not to be.
After five minutes Caden was too cold and 
wanted to play inside!


I think the girls, Aubrey and Olivia convinced
Luke to help them make a snowman.
Oh....that is THE tiniest little snowman I have ever seen.

Looks like they got a bit more than we did!

Now.....when little ones are home on snowdays....
this snack cake will be just what you need to warm up!


BANANA SPICE CAKE
 12 cup butter, softened
34 cup brown sugar, firmly packed
1 large egg
14 cup buttermilk
1 teaspoon vanilla
2 bananas, ripe, mashed
1 12 cups flour
1 12 teaspoons baking powder
12 teaspoon baking soda
12 teaspoon salt
1 teaspoon cinnamon
14 teaspoon ground cloves
14 teaspoon nutmeg
½ cup milk chocolate chips


Preheat oven to 350°F.
Coat a 8-inch square baking pan with nonstick cooking spray.
In a large mixing bowl, with electric mixer, cream butter and brown sugar. Beat in egg, buttermilk, vanilla, and mashed banana until blended.

In a bowl, combine dry ingredients and spices.
Mix the dry ingredients into the butter mixture until moistened. Do not over beat.
Pour batter into prepared pan and spread evenly. Sprinkle chocolate chips over batter. Bake 25-30 minutes, or until a wooden skewer inserted into middle of cake comes out clean.
Cool in pan on wire rack for about 10 minutes. Serve warm, or room temperature and give a slight dusting of powdered sugar!


I am beginning to organize the Easter decor and decide where I need to put a bit of spring. My helper is always close at hand. I hear more snow and freezing rain are on the way, so it promises to be a dreary weekend! How's the weather at your home? Are you dreaming of bunnies? Hope you try the recipe...it's a yummy one!

    1. I am going to be so sweet and allow you to keep all the snow! I just read about a 40 plus car pile up in Bangor! I can handle the snow, just not the ice. And....considering it lasts well into May...Texas is just the perfect place to stay put! Stay warm Katie girl!

  2. He may be a small snowman, but he is a cute one! We have had zero sticky snow thus far. Perhaps one day, we'll see some snowmen.

  3. all kids should get to make a snowman, in winter. even a tiny one! :-)

    no bunny dreams here, yet. oh, other than looking longingly at the Caddbury Eggs adds. -sigh-

    and who needs a bunny decor, when regal Miss Mae is there?!?!?!? :-))))
