STRAWBERRY WHITE CHOCOLATE CREPES

You may think of crepes as a rather  elegant sweet ending and indeed they are! Crepes are so very easy to make and can be turned into something sweet or savory! This is a rather semi-homemade dessert that will impress not only your family, but also VIP guests when you are hosting an elegant dinner party! 




French Crepes
1 cup all-purpose flour
2 eggs
1/2 cup milk
1/2 cup water
1/4 teaspoon salt
2 tablespoons butter, melted


In a large mixing bowl, whisk together the flour and the eggs. Gradually add in the milk and water, stirring to combine. Add the salt and butter; beat until smooth.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.
Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Serve hot.

 White Chocolate Pudding
1 box Hershey’s instant White Chocolate Pudding
2 cups milk

Blend milk and pudding mix in a medium sized bowl. Whip together until thickened. Refrigerate until ready to use.



Fresh Strawberries
Macerate the strawberries by simply sprinkling them with sugar, because doing so draws the liquid out of the berries and creates a syrup.

Wash berries and pat dry. Remove stems and slice. Sprinkle with sugar and refrigerate until ready to use.


To assemble the crepes, spoon cheesecake pudding over each crepe and roll up. Spoon the fresh berries over the crepe, top with whipped cream and sprinkle with milk chocolate chips!

Now I must find the Hershey's pudding & try this one. You present everything so beautifully & with such an 'upbeat' attitude that you've inspired me to cook more than I have in quite a while!
