SOUR CREAM BLUEBERRY COFFEE CAKE.....SCHOOL'S OUT FOR THE SUMMER

Isn't it wonderful having the time to browse through cookbooks and try out new recipes?
You just never know when you are going to find a recipe you wish you had made before!
This coffee cake is fab! It's easy to prepare, bakes up beautifully and tastes divine!
I cannot wait to say "good morning y'all, when Miss M and the Duke arrive!"
 




The Cake

2 ½ cups biscuit mix (Estelle’s recommends Pioneer)
½ cup sugar
1   cup blueberries
½ cup sour cream
1   egg
2  T. milk
1 t. vanilla extract
 
The Crumb Topping

1/2 cup sugar
1/3 cup flour
3 T. butter, cut into small cubes
 
Preheat oven to 350 degrees F.

Spray a 9” x 9” baking dish with nonstick cooking spray.
In a medium bowl combine biscuit mix and sugar.  Add sour cream, eggs, milk and vanilla extract. Mix until combined. Batter will be very thick.  Gently stir in blueberries by hand. This will take a few minutes because batter is thick.
Spoon batter into prepared baking dish and make sure it is evenly spread.

In a bowl, combine sugar, flour and butter. Using a pastry cutter, or two knives,  start combining mixture until it looks coarse and crumbly.
Sprinkle mixture over dough.

Bake about 30-35 minutes until a toothpick inserted comes out clean.


This week marks the final week of school here in Texas!
Our girl is growing up!


There was an end of year school dance last week and
Amelia and Abbie attended with style!
I cannot believe how fast time is passing.......they have been best friends since they were tiny tots and now, here they are going to a middle school dance. The new school year will mark their entrance into high school. I simply cannot believe the words...."High School!" For now, we are going to enjoy the moment and the summer. Stay sweet and be happy!
