SOUR CREAM BLUEBERRY COFFEE CAKE.....SCHOOL'S OUT FOR THE SUMMER

This coffee cake is fab! It's easy to prepare, bakes up beautifully and tastes divine!

2 ½ cups biscuit mix (Estelle’s recommends
½ cup sugar
½ cup sour cream
1 t. vanilla
The Crumb Topping
1/2 cup sugar
1/3 cup flour 3 T. butter, cut into small cubes
Preheat oven to
350 degrees F.
Spray a 9” x 9” baking
dish with nonstick cooking spray.
In a medium bowl
combine biscuit mix and sugar.Add sour
cream, eggs, milk and vanilla extract. Mix until combined. Batter will be very thick.Gently stir in blueberries by hand. This will
take a few minutes because batter is thick. Spoon batter into
prepared baking dish and make sure it is evenly spread.
In a bowl, combine
sugar, flour and butter. Using a pastry cutter, or two knives, start combining mixture until it looks coarse
Bake about 30-35
minutes until a toothpick inserted comes out clean.

There was an end of year school dance last week and
Amelia and Abbie attended with style!
I cannot believe how fast time is passing.......they have been best friends since they were tiny tots and now, here they are going to a middle school dance. The new school year will mark their entrance into high school. I simply cannot believe the words...."High School!" For now, we are going to enjoy the moment and the summer. Stay sweet and be happy!
