APPLESAUCE PANCAKES.....MMMMMMMMMMM!


My son! The Good Cook!
 
We started Saturday morning, by having coffee and watching The Pioneer Woman.
She was making egg sandwiches and Applesauce Pancakes.
That's all it took.......now,we were starving!
 
Do you realize what a treat it is, when your children cook for you?
 
Greg" "I'm going to make breakfast for everybody.
Do you have bacon, Ma?"
(he's the only one of our children who calls me Ma)
 
Me: "No. I used it this week."
 
So, off he went to the store and brought everything he needed for his breakfast treat.
 How wonderful is this....going to the store in the early hours of a Saturday morning!
Oh yes please......egg sandwiches!
 


 English muffins, bacon, eggs over easy and a sprinkling of cheddar cheese!
Perfecto!


And so......while darling son is making breakfast,
I decided that we would try the Applesauce Pancakes for Sunday morning.
I had just bought the MOST beautiful apples at Costco and what good timing to see this recipe!
 Time to make the homemade applesauce!
 


Done! Let these simmer in the crockpot with sugar, cinnamon and a little water and
off we go for Saturday errands!


Sunday morning.......blend the applesauce for the pancakes!


 
Pancakes!
There are certain moments where the luring aroma of pancakes
cooking on the griddle just captivate my senses....
cooked to a golden brown, loaded with butter and real maple syrup!
 
The Darling was golfing and missed this heavenly breakfast!
Everyone agreed.....mmmmmmmm.....a moment of silence!
 


APPLESAUCE PANCAKES
3 cups cake flour
3 tablespoons sugar
2 tablespoons baking powder
1 teaspoon salt
2 1/2 cups milk
2 cups applesauce
1 tablespoon vanilla
1/4 teaspoon cinnamon
2 eggs
Butter, for cooking and serving
Maple syrup.....warmed

In a large bowl, combine the cake flour, sugar, baking powder and salt. Stir together and set aside.

In a separate bowl, whisk together the milk, applesauce, vanilla, cinnamon and eggs. Slowly drizzle the wet ingredients into the dry ingredients, stirring gently. 

Heat a large skillet or griddle over medium-low to low heat. Smear a little bit of butter over the surface and  batter onto the griddle. Wait a minute or so, then flip to the other side. The pancakes should be light golden brown and set in the middle.

Top with butter and drizzle with warm maple syrup. Drizzle warm applesauce over the pancakes!
