TRIPLE CHOCOLATE CAKE!

The cake is in the oven....can you smell that heavenly chocolate aroma? While we are waiting for the cake to finish baking, I thought I would take a look back at January days at The Maine House last year. Long cold days of snow and wind. Mae Mobley was a "Mainer" so, her windows to the world were exciting and stimulating! We adopted Mae when she would fit into the palm of your hand...a ripe old age of seven weeks. Her perch served her well looking out over her domain at all of the activity happening in the neighborhood, I used to love watching HER as she watched the snow fall, the school bus picking up the children, people walking their dogs or snowshoeing past the house! Aren't cats just fascinating to watch?



She spent many an hour watching the backwoodlands


She recognizes her Papa shoveling a pathway for me in order to walk to the birdfeeders and far enough to leave apples and acorns for the deer!


In the gloaming hours, here came my beloved deer...normally three, sometimes we had up to five...precious and stunningly beautiful...all of them. I had named each of them.....Clarissa, Simone, Josephine, Jacqueline and Zoe. I know, I know.......they had my heart! Look closely, and you will see that Mae is watching her...just one.... at the place where I left the apples.....



I managed to snap her closeup.....I worried about these darlings during those harsh winter days! It was our gift you know.....all of that beauty!
God can be generous in his gifts when we least expect it.



Cake's done!



ESTELLE'S TRIPLE CHOCOLATE CAKE
1 (18.25 ounce) package devil's food cake mix
1 (5.9 ounce) package milk chocolate pudding mix, instant
1 cup sour cream
1 cup vegetable oil
4 eggs
1/2 cup warm water
2 cups semisweet mini chocolate chips

Preheat oven to 350 degrees F. In a large bowl, mix together the cake and pudding mixes, sour cream, oil, beaten eggs and water. Stir in the chocolate chips and pour batter into a well greased bundt pan.
Bake for 45 minutes, or until top is springy to the touch. Cool cake thoroughly in pan  before inverting onto a plate. Dust the cake with powdered sugar for a finishing touch!

  1. Those are beautiful photos of Mae and the gorgeous deer. I love them, too. They are so lovely to look at. I worry about the ones around here, too. I hope they are doing ok. We are having very mild weather right now and I am thankful mostly for them and the ferals. Oh my goodness, that cake looks so good.
