A classic.....
THE TOMATO CUCUMBER SALAD!
Everyone most likely has their own version of this salad,
but I make mine very similar to
The Divine Miss M....with a bit more kick!
By request, this is Estelle's version of this fresh and tangy delight!
5-6 Roma Tomatoes
1 large cucumber
Red Wine Vinegar
Olive Oil
Salt and Pepper
Red Pepper Flakes
Dice the tomatoes.
Peel and dice the cucumber.
Mix together and sprinkle with salt and pepper to taste.
(We love lots of Peppah!)
Sprinkle with red pepper flakes....maybe 1-3 teaspoons
depending on how much of kick you prefer.
Sprinkle with olive oil, 2-3 teaspoons.
Add the red wine vinegar....1/8 to 1/4 cup.
Allow to marinate for about 30 minutes in
the refrigerator. Serve immediately.
Now your measurements may vary depending on taste.
Be cautious not to add too much oil or vinegar.
You want a very light flavor.
Enjoy!
One of my favorites when our tomatoes come out! You certainly make me feel like summer salads are around the corner for dinner on hot evenings!

Dearest Betsy, We love this at our house -- what a wonderful southern summer classic! I make mine from my MIL's recipe with cucumbers and Vidalia onions with dressing. I've seen it a lot in restaurants recently, and theirs always have tomatoes. We love tomatoes too! :D

I love making this salad. Just a little hint from my southern granny..if you use tomatoes out of season..add a tablespoon of sugar to "open up" the tomatoes so they will accept the dressing like ripe seasonal tomatoes do.
