MEXICAN CORNBREAD....A TASTE OF TEXAS!



If you are fortunate enough
to live in the
Great State of Texas....
then you need to know how to make a good
Mexican Cornbread!


A Mississippi girl raised properly,
will know how to bake up a light and fluffy biscuit!
It's equally important for a Texas gal
to be able to serve her family
a fabulous hot and cheesy Mexican Cornbread!

Not to fret....
this Bell's Best recipe is
going to win you rave reviews!
This recipe came from Hazel Walters in
Natchez, Mississippi

MEXICAN CORNBREAD
1 1/2 cup self-rising corn meal
2 large eggs
1 cup milk
1/2 cup oil
1/2 cup chopped onion
1/2 can of creamed corn
2 fresh jalepeno's
(I have also used jarred jalepeno's)
1 cup shredded sharp cheddar cheese


In a large mixing bowl.
blend all ingredients together.
Pour batter into a greased 9- inch baking pan.
Bake in a preheated 350 degree F. oven
for 30-40 minutes.
Serve with lots a buttah!


This goes great with a big Texas style barbecue!

  2. Made some just last night!! My daughter in law is recovering from surgery and I've been head cook and bottle washer and YaYa for the last week. Nothing makes my son happier than a huge cast iron skillet of jalapeno cornbread so I've been making it every other day! Hep Me! Hep Me!!! My ol' bones are way too old to chase toddlers all day long.....I'm about to go down...!

  3. Corn bread is one of the true treasures of southern cuisine, isn't it? :) I love all the wonderful variations, and this recipe looks scrumptious, Betsy! I also LOVE the framed map of Texas in your first picture -- I have a fascination for maps of all kinds.
