WARM APPLE CAKE WITH BROWN SUGAR GLAZE....FEATURED IN SOUTHERN CAKES!

I have said it before and I'll say it again...
I simply adore cookbooks!
Especially SOUTHERN cookbooks.
This is my latest addition to my collection...
gotta love"USED" from Amazon! 


I adore this book.
As soon as it arrived and I took it out of the box,
that aroma of a musty old house came through.
I actually LOVE that smell....
it reminds me of my grandmother's.
Of course, that goes away after a bit. 
I always wonder who owned the book originally....
was it a gift? How did the book end up in a bookstore
in some tiny little nook up in Boston?


This little gem contains a wealth of recipes
from well-known and some not
so well-known southern writers and restaurants. 


I always find a recipe someone has marked
and loved.....cannot wait to try this~

If I am going to bake for family and friends,
I want to offer them tried and true showpieces!


And, who doesn't love to have pretty cooking tools?

They are very reasonably priced and come in 
absolutely beautiful colors and patterns!


I had seen this recipe around for some time
and today was the day to try it for myself!
I halved the original recipe which was going to be perfect for the darling and me!
This little cake is REALLY, REALLY GOOD!!


The brown sugar glaze tops this cake
with a buttery, warm cinnamon taste!
Grab a spoon....it's good to the last drop!


With yet another glorious spring day here in Texas
we had lunch on the patio.
Fresh tuna salad sandwiches,
with celery, carrot sticks and radishes
followed by a little slice of warm apple cake!


The Apple Cake
1 1/2 cups  flour
1 cup sugar
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
2 eggs
1/2 cup canola oil
1 teaspoon vanilla
1 1/2 cups finely chopped apples
1/2 cup pecans or walnuts, chopped (optional)

Brown Sugar Glaze
1/2 cup packed light brown sugar
3 Tablespoons butter
1/2 teaspoon vanilla
1 Tablespoon cream


For the cake: Heat the oven to 350 degrees F. Grease an 8-inch pan (round or square) and set aside.

In a medium bowl, combine the flour, sugar, baking soda, salt and cinnamon.Stir with a whisk to mix everything together.

In a large bowl, mix the eggs with a hand mixer til light in color and foamy. Add the oil and vanilla and beat well.

Stir in the flour mixture with a spoon and continue stirring the batter til the flour disappears. Add the apples and nuts (if using) and stir to mix them into the batter.

Scrape batter into prepared pan and bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.

Place the hot cake on a wire cake. While it's still hot, prepare the glaze.

For the glaze: Combine all the ingredients into a saucepan. Cook over medium heat, stirring often, until the mixture comes to a gentle boil. Cook for 3-5 minutes.

Spoon the hot glaze over the still hot-from-the-oven cake. Let the glazed cake cool completely before serving straight from the pan.

  2. I do declare, Betsy, this cake looks like another winner. I love old book smells as well. It's something about the old time honored recipes that someone made long ago. The notations give your cookbook another bonus from another baker from another time. I love Ree's pieces as well. Have a wonderful afternoon in your kitchen! ♥

  5. Yum! This one is definitely going to he beach with us next week! I've been cooking for 2 weeks and freezing to load my car. Our whole family is going including 6grandbabies under the age of 6. Whew! Each daughter in law has committed to nightly meal but that still leaves 4 nights for me. But I love planning and shopping and cooking the food ahead of time and they are always so grateful. And happy!!!
    Apple cake looks Lilith will travel well too ...especially since we have to stop in Baton Rouge to watch our awesome LSU play Florida in s pretty tough baseball game!!!
    Gonna be such a fun trip!!!!

  7. Oh Betsy, this looks totally yummy!! :) I just recently pinned a very similar recipe from a cooking blog that I follow. I'll have to try this soon.
