SPICY CLAIM DIP

Southerners do not go in much for formal first courses at our dinners! The number one reason for this is that given our custom for "strong highballs", we like to serve plenty of good canapes and appetizers with our ritual 5:00 cocktail hour....and....by cocktails, I am not referring to a little ole' glass of wine or sherry! Mother never dreamed of setting out a meager bowl of peanuts or a wedge of cheese. We knew that on Christmas eve, the dining table would be laden with exceptional cocktail food......this is truly where serious eating begins!

Oh, how we made merry with those Bourbon Manhattans and Whiskey Sours.........

SPICY CLAIM DIP
1 ( 8- ounce) can of minced claims, drained
6 ounces of cream cheese, room temperature
1 small onion, minced
2 T. bottled claim juice
1 t. fresh lemon juice
1 t. Worcestershire sauce
1/2 t. salt
Cayenne pepper, to taste
Fresh Parsley, garnish

In a mixing bowl, combine the claims, cream cheese and onion...mix until well combined. Add the remaining ingredients and mix until smooth. Transfer to a ceramic crock, garnish with fresh parsley and serve cold, with Melba toast rounds or buttery crackers!
