CAJUN CABBAGE....ANOTHER CROCKPOT FAVORITE!

 Oh Y'all.........this is SO GOOD!!!
My all time favorite cookbook just fell open to this page, so
this was the featured recipe from the weekend!
You are gonna LOVE it!!!

And.......those gorgeous Vidalia's were in at Sprouts!
Talk about a taste of summer!!!
This recipe was modified a bit by Estelle's to
make it a tad bit spicier from the original
recipe, so if you prefer a taste a bit milder,
feel free not to add Cajun seasoning.

Cajun Cabbage from
Madison County Cookery
comes from
Debra Hardy Case
in
Cary, Mississippi

Looks YUM-O,,,,doesn't it?

I also baked up a pan of the Darling's favorite
Firehouse Cornbread

CAJUN CABBAGE
1/2 head of cabbage, coarsely chopped
1/2 lb spicy pork sausage
1 lb. ground chuck
1 small onion, chopped
1 clove garlic, minced
1 can Rotel tomatoes
1 can stewed tomatoes
1 T. sugar
1 t. salt
1 t. pepper
1 cup rice, not instant
1/4/ t. Cajun seasoning

Place cabbage in crockpot. Add about 1/4 cup water. Cover and put on low setting.  Meanwhile, saute sausage, ground chuck, onion and garlic. Drain and add to cabbage. Add tomatoes and seasonings. Mix in 1 cup of raw rice. Cook on low setting for 6-8 hours. Divine!!!

It was a good weekend over in Atlanta......

So happy he won a game ball for his first triple!

Y'all have a great week!

  1. I have to tell you how very much I enjoy reading your blog. I live in Fort Worth, so I feel a special kinship with you and your family.
Your home and yard are beautiful, and you give me inspiration to create something for mine. I especially like the Emerson quote that you have as your tagline. I read this quote at the very end of my mom's funeral a couple of years ago, because it described her perfectly and I strive everyday to be the kind, loving woman that she was. Keep up the good work!
