WARM ZUCCHINI BREAD FOR A COLD WINTER'S DAY


Everyone loves to be served a warm slice of bread
for breakfast or an afternoon snack with hot tea or coffee.
Mother used to make this for us when we came home after school.
There is nothing better to warm your soul on those cold, blustery days! 


Aren't these little winter plates just precious?
I bought a set of these last year during
the after Christmas sale at Williams-Sonoma!
Perfect for January and February!!!



Estelle's Favorite Zucchini Bread
3 eggs
1 1/4 cup vegetable oil
1 1/2 cups sugar
1 t. vanilla
2 medium fresh zucchini, unpeeled and grated
2 cups flour
2 t. baking soda
1 t. baking powder
1 t. salt
1 t. cinnamon
1/4 t. ground cloves
1 cup coarsely chopped walnuts



Beat together the eggs, oil, sugar and vanilla. Beat with hand mixer until light and thick. Fold in the grated zucchini. Sift dry ingredients together and blend into the wet ingredients. Fold in walnuts and pour batter into a greased loaf pan.

Bake in a 350 degree F. oven for 45 minutes. We serve ours with softened cream cheese or butter!

Estelle's Sweet Tip~ Sprinkle top with nutmeg and a dusting of sugar while baking.

    And yes, those dishes are precious. And purrrrrfect for this time of year. I'm sure even sweet Mae Mobley, would agree.

  3. Betsy, Oh yum, where did you say you lived? LOL I do love that you have kept those cute snowmen plates out. I like visiting blogs where you ladies cook lots. That is not me any more.   4. Your plates are very pretty and they look especially nice with zucchini bread on top, too. No zucchini here, but there must be some pumpkin or something somewhere.
