WATERMELON CUPCAKES....A LAST TASTE OF SUMMER!

Don't you just LUV Betty Crocker...
she comes up with the best idea in her limited edition bakery products!


I picked up a box of her Watermelon cake mix while I was 
visiting Atlanta and was really looking forward to 
baking these up for the darling upon my return!
I saw that our dear BJ at Sweet Nothings made hers into a
gorgeous bundt cake with a lime glaze...oh heavens to Betsy!

If you can find a box of this cupcake mix.....
buy it and bake some!
A light taste and beautiful color!

There is a green Watermelon frosting that you can purchase
in addition to the mix, however, I went with a lighter flair..
tinted green Cool Whip, with a scattering of mini chocolate chips!


Now, how easy is that?


Have you seen these little cupcake plates by Martha Stewart?
Totally adorable!!!

    You girls are killing me... watermelon cake mix. What will they think of next!! I have not seen it but I am certainly going to look for me a box. I need to do it while it is still watermelon season 'cause can you just imagine eating anything watermelony in the winter time!

    My grands would love these; we bought a big melon while they were here for a visit and they just ate it up! Where did the summer go? XOXO

    Oh we just saw a younger version of those gals on the local evening news. They were at Old Orchard Beach. I told my husband that some gals should not wear bikinis. I think they've been enjoying your yummy-looking cupcakes. I have not seen that limited edition flavor in our stores, but I would like to.
