7-UP CAKE.....BEACH BUNNY BARBARA

I know, I know! You are thinking how many times have I seen a recipe for 7-up cake?
But, I must confess, this is one old favorite southern recipe I had never made....
until recently!
What in the world was I waiting for?
If you have NOT made this before....stop what you're doing and run to the kitchen!
Make this for the ones you love NOW!

But first up.....let's talk about Miss Barbara!

Oh you doll!
I love receiving surprise packages from Mr. UPS man!
It was an unexpected arrival from Miss Judy in Pensacola!
I quickly opened the box....and about rolled on the floor laughing!

"She reminded me of you"...said the card! Thanks, I think!
You know, you can depend on your sister to tell it like it is....no holds barred!

Babara's little tag says,
"I wonder what it would be like to live in a world, where it was always June!"

I simply love her!

Wouldn't we all like to be more like her"
Yes, she may not fit the image of the ideal beach bunny figure,
but just look at this ole' gal......she's colorful, full of fashion, and
ready for a day of fun in the sun!
There is something to love about a sister who reminds you that you are special!
Now....get happy and go bake that cake!

A featured recipe from one of my favorite new cookbooks!

Oh how exciting....an unexpected note of appreciation!

7-Up CAKE
1 ½ cups butter
4 eggs, room temperature
1 T. lemon extract
2 ½ cup sugar
3 cups cake flour
¾ cup 7-Up

Grease and flour a bundt pan. Preheat oven to 325 degrees F. Cream butter and sugar well. Add eggs, one at a time and beat well. Mix in lemon extract, flour and 7-up. Pour batter into prepared pan. Bake for 1 to 1 ½ hours. Allow cake to cool for about 20 minutes before removing from pan.
