STRAWBERRY COBBLER....JUST IN TIME FOR SUMMER

Who doesn't love a fresh berry cobbler? Have you ever considered using fresh strawberries in the standard cobbler batter? This recipe was made by my grandmothers and mother so many times, but I do not recall if they ever used strawberries. It was normally fresh peaches of blueberries. I believe you will love this recipe! The aroma is incredible! I'll just bet you will not hold off until dinner to taste test this little gem!

Strawberries, sugar and lemon juice....
let this marinate for all the delicious strawberry juice!

An easy cobbler batter. It's fine if there are a few lumps remaining!
This buttery batter is so darn good!

Place the berries on top of the batter being careful not to stir!
Oh baby, baby!

Strawberry Cobbler
3 cups fresh strawberries, cleaned, stem removed and diced
1/4 cup sugar
1 t. lemon juice
1 cup flour
2 t. baking powder
1 t. salt
1/2 cup sugar
1 cup milk
1/2 t. vanilla
1 stick butter, melted

Preheat oven to 350 degrees F. In a mixing bowl, place strawberries and sugar. Combine gently and let sit for about 10 minutes. Add the lemon juice and stir. Continue to let the mixture marinate while you prepare the batter.

Mix flour, baking powder and salt in a mixing bowl. Add the milk. Then pour in the melted butter and vanilla. Stir to combine the ingredients.

In a greased baking pan, either 8" x 8" square or round, pour in the batter. Spoon the fresh berries on top of the cobbler batter. Do not stir. Bake for about 30-35 minutes. Serve warm.

  3. Dear, I have never made or tasted strawberry cobbler! What a great idea! It looks even very pretty and a spring dessert.
Loved the wedding pictures! I always cry at weddings. And the parties after are always so much fun (except the one who always drinks way to much)
