SCRUMPTIOUS BANANA-NUT BREAD....ENDING THE LOVE AFFAIR

 
Dearest Winter...
 
I am letting you know that I am ending our love affair.
Your enchantment has lost it's luster...
  Perhaps we shall rekindle our romance next year~

This is looking out the window of one our favorite Irish Pubs in Old Port....we used to sit right at this table and watch the shoppers while sipping a glass of wine! There is a dance studio right across the street where you see those arched windows. It was such fun to watch them perform and practice in the evenings.

I love to have quick breads on hand for snacks in the afternoon. They seem perfect for after school snacks or a treat with coffee or hot tea. Normally, I prefer banana bread using Sour Cream or buttermilk and on this day, I did not have either of these on hand. I found this recipe from Sunday Dinner at Grandma's from the Gooseberry Patch series and it is really, really good! The recipe had been submitted by Carolyn Ayers from Kent, WA. and she stated her grandmother had made this same recipe for seventy-five years!
 
 
BANANA-NUT BREAD
2 cups flour
1 cup sugar
1 t. baking soda
1/4 t. salt
1/2 cup canola oil
2 eggs, beaten
3 ripe bananas. mashed
1 cup chopped pecans
 
Combine flour, sugar, baking soda and salt in a bow. Mix well and set aside. In a separate bowl, mix oil and eggs; add bananas. Add flour mixture and mix well. Pour into a greased 9" x 5" loaf pan and bake at 350 degrees F. for 25-30  minutes.

  1. I am so very sick of snow. Just writing the word makes me sick. LOL I am waiting longingly for spring to come and just to see the sight of a robin!

    The recipe for banana bread is a new one for me. Thank you for sharing the recipe. I will have to try it.

  2. Your photos are beautiful but I, too, am done with winter. I am seeking anything with lots of colour, especially yellow. I'm even knitting with yellow wool today. This recipe looks easy and delicious. I'll try it and let you know if it's a keeper. Thanks. Deb
