GLAZED POPPY SEED TEA LOAF


Outside the snow on the kitchen windows frosts over. A new dusting of flakes  blows off the barn and swirls through the trees. Birds and squirrels are busy at the feeders and sometimes I hear the crackle of burning logs in the fireplace.

 
 
 
Oh no…yet another Nor’Easter is coming. The holidays are over and the mantle clock ticks away, yet it seems time stands still. It would be good to warm up the house by cooking something special.

 

 
Allow the glaze to seep into the bread while still warm

 

Glazed Poppy Seed Tea Loaf 

 

3 cups all-purpose flour
1 1/2 teaspoons salt
1 1/2 teaspoons baking powder
3 tablespoons poppy seeds
1 1/2 teaspoons butter extract
1 1/3 cups vegetable oil
3 eggs
1 1/2 cups milk
2 1/4 cups white sugar
1 1/2 teaspoons vanilla extract
1 1/2 teaspoons almond extract
1/4 cup orange juice
1/2 teaspoon butter flavored extract
1/2 teaspoon almond extract
1 teaspoon vanilla extract
2 cups confectioners' sugar

 

Preheat oven to 350 degrees F. Grease bottoms of two 9-inch loaf pans.
Mix together flour, salt, baking powder, poppy seeds, butter flavoring, oil, eggs, milk, sugar, vanilla, and almond flavoring. Pour into prepared pans.
Bake at 350 degrees F for 45 minutes to one hour. Cool 5 minutes. Poke holes in top of loaves and pour glaze over.
To make glaze: Mix orange juice, 1/2 teaspoon butter flavoring, 1/2 teaspoon almond flavoring, and 1 teaspoon vanilla. Add enough confectioners' sugar to make glaze.

 How delicious with a cup of lavender tea and apricot jam!

    1. This is just one of those easy little quick bread recipes Beth! If you don't have any butternut extract on hand, you could substitute some lemon or just increase the vanilla and almond. Great warmed up with your favorite jam! Love hearing from you Beth!

  2. This looks delicious. Everything there sounds so cozy =) Could have used a bit of cozy last week when, in my neck of the woods, we had blizzard warnings and -41 weather! I'll know for next time!
