The Spring Lunch Bag

We are always on the look out for little unique
lunch bag goodies for the grandbabies.

These two recipes will be easy to prepare and delicious for the family when they need a little snack in the morning or afternoon! And, talk about a heavenly aroma in the kitchen. It's baking day at The Maine House....quick, easy and delish!

Pistachio Bread
1 Duncan Hines yellow cake mix
1/4 cup water
4 eggs
1/2 cupvegetable oil
1 small pkg. instant Pistachio pudding mix
1 cup sour cream

Sugar Mixture
1/4 cup light brown sugar
1 tsp. cinnamon
1/2 cup chopped nuts ( optional )

Spray two loaf pans with cooking spray. Mix cake mix, water, eggs, oil, dry pudding mix and sour cream.Beat until creamy. Put half batter in loaf pans, half sugar mixture, remaining batter and remaining sugar. Bake at 350 for 45 minutes to 1 hour.

Chocolate-Pistachio Bread
2/3 cup granulated sugar
1/2 cup butter, melted
3/4 cup milk
1 egg
1 1/2 cups all-purpose flour
1 cup chopped pistachio nuts
1/2 cup semisweet chocolate chips
1/3 cup unsweetened baking cocoa
2 teaspoons baking powder
1/4 teaspoon salt

Heat oven to 350°F. Grease bottom and sides of 9x5-inch loaf pan with shortening.
In large bowl, mix granulated sugar, butter, milk and egg until well blended. Stir in remaining ingredients except sugar crystals. Pour into pan. Sprinkle with sugar crystals. Bake 50 to 55 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Loosen sides of loaf from pan; remove from pan to wire rack. Cool completely, about 2 hours, before slicing.
