THE BLUE WILLOW INN BUTTERMILK PIE
Now come on....
you knew we were never going to give up pie, didn't you?
If you come to visit Estelle's,
I would probably make sure to have a
freshly baked buttermilk pie on hand!
It's the best of the south
one that you can savor in any tea room worthy of your visit!
One of my goals is to use my favorite
cookbooks and serve our favorite recipes throughout the year!
Pie just makes one happy, don't you think?

Buttermilk pie is as basic as can be,
and while it is possible for one's
head to be turned at the buffet table
by more elaborate confections,
it would be a grievous error to neglect

I have made many buttermilk pies
so I have adapted the Blue Willow Inn's
original recipe to my own.
THE BUTTERMILK PIE
3 eggs, slightly beaten
1 1/2 cup sugar
3 T. flour
1/2 cup softened butter
1 cup buttermilk
1 t. vanilla
1 t. lemon juice
1 unbaked 9-inch pie shell
Preheat oven to 350 degrees F.
Combine the eggs, sugar, flour and butter
in a mixing bowl and beat with hand mixer
Add the buttermilk, vanilla and lemon juice
and beat about one minute more.
Pout mixture into an unbaked pie shell.
Sprinkle with nutmeg.
Bake for 50 minutes until filling is set.
Serve warm or cold.
