THE SPECIAL K COOKIES...BETCHA' CAN'T EAT JUST ONE!


Oh y'all...these are delightful cookies.
The recipe came from a dear patient
who kindly baked up a batch for Miss Judy's office
and Dr. Cheryl!
She said they devoured them in a single afternoon!
Everyone kept munching away until there were no more!
It's an easy recipe and just a YUM-O cookie!!!

THE SPECIAL K COOKIES
2 cups of Special K
1 1/2 cups of self-rising flour
2 sticks of butter, room temp.
1 cup sugar
1/2 cup brown sugar
1 egg
1 t. vanilla
1 cup chopped pecans


Bring the butter to room temperature in a 
medium sized mixing bowl.
Add the sugars and beat with hand mixer.
Add the egg and vanilla.
Blend in the flour and mix well.
Add the cereal and pecans and mix.
Drop by spoonfuls onto an ungreased baking sheet.
Bake at 350 degrees F. for 10-11 minutes.

I smell cookies.......

  2. Bet it would be good with Rice Krispies, too. I have those. Haven't had Special K since I was a child.

  4. I need to pick up some Special K and let my granddaughter make these this weekend. She will leave out the nuts, though...no one (save me) likes nuts in this family. Can you BELIEVE that? Well, my youngest son does but he is not here to eat things. I am not sure they are really MY kids! xo Diana
