JAMAICAN BUNDT CAKE


I love easy recipes.
Probably like you, I am not a trained professional chef,
so recipes need to be easy enough for me to make,
especially when it comes to baking.
This Jamaican bundt cake has all the
delicious flavors of the tropics combined into one...
bananas, pineapple and coconut...
what's not to love?



JAMAICAN BUNDT CAKE
3 cups sifted cake flour
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon baking soda
2 cups mashed bananas
1 cup coconut
1 (8- ounce) can crushed pineapple in juice
1 1/2 cups vegetable oil
2 cups sugar
3 eggs, beaten
1 1/2 teaspoons vanilla 

Preheat oven the 350°F.
Sift together dry ingredients.Add the bananas, undrained pineapple/syrup, sugar, eggs, coconut and vanilla. Stir all together with low speed of electric mixer.
Pour into a well-greased Bundt pan.
Bake for approx. 1 hour. Allow to cool for 10-20 minutes before inverting onto a serving plate.

  1. My kind of cake! All the flavors I adore in one dessert; makes me still think summer is still here. Kind of is with upper 80s, but the leaves have started to change and I was thinking pumpkin something, but it's probably because I'm missing my Kelly a lot lately.   3. Hey, I made the cake 1st time the directions don't say what to do with the 1 1/2 c. Oil so I added it to the cake. Cake was good but I think the oil maybe was too much? Anyway, making it again with 1 cup and will see what happens. Also I tweaked it by adding 1 tsp of cloves, ginger,nutmeg, 3/4cups of nuts and raisins and rum instead of vanilla. After all it is a Jamaican cake.

  4. I had no idea that rum cake could be made with different types of alcohol. I'll have to try making it with brandy next time.Rum Cake Jamaican
