Mother's Day 2015!
I hope someone else is doing the cooking this year.....
Here is the perfect sweet treat for honoring Mom's everywhere....

STRAWBERRY SHORTCAKE POKE CAKE

1 package Strawberry Cake Mix
Approximately 10 oz. of sweetened,
frozen sliced strawberries, thawed

Preheat oven to 350ºF. Grease a 13"x 9" baking dish.
For cake, prepare, bake and cool slightly according to package directions.

Poke holes 1" apart in top of cake using handle from wooden spoon.
Spread thawed strawberries with juice evenly over top of cake
allowing mixture to soak into holes.

The Topping
1 (3.4 oz.) package vanilla instant pudding and pie filling
(Estelle's used White Chocolate)
1 cup milk
1 carton of whipped topping

For topping, prepare pudding mix according to package directions
using 1 cup milk. Fold whipped topping into pudding mixture.
Spread over cake.  Refrigerate at least 4 hours.

This little recipe is a fabulous sweet ending for those
Mother's you are honoring on Mother's Day!
It's light and oh so delicious!
