STRAWBERRY CREAM CHEESE COBBLER....FRESH SIGNS OF SPRING

The vacation has come to an end.
Spring Break began a few days early and
Disney was wonderful...
Miss M said it was the best vacation ever!

Time for practice...Baseball practice!

This is going to be a good little team.
Finally all the six year olds are on the same team.

A few good coaches who are actually "teaching"
the skills and drills of the game.

But...true to the spirit of a six year old little boy...
it was a "time out" to take his Momma a handful of spring flowers!
Now doesn't that just melt your heart?

STRAWBERRY CREAM CHEESE COBBLER
1/2 cup butter
1 egg, lightly beaten
1 cup milk
1 cup all-purpose flour
1 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
2 quarts whole strawberries, capped and washed
4 ounces cream cheese, cut in small pieces

Preheat oven to 350 degrees F. Melt butter in a 9" x 11" baking dish or large round baking dish. In a small bowl, mix together the egg, milk, flour, sugar, baking powder and salt. Pour directly over the melted butter in the baking dish, but do not stir.

Add the strawberries, arranging in a single layer as much as possible. Sprinkle cream cheese pieces over strawberries. Place in preheated oven and bake for 45 minutes, or until top is golden brown and edges are bubbling. (Crust rises up and around the fruit, but fruit will still peek out of top.)

Serve hot out of the oven with fresh whipping cream, vanilla ice cream or frozen yogurt!

Comments...
"I don't know about the cat,
but
I'm enjoyin' it!"

I love Mourning Doves.
On my way to retrieve the mail, these two love birds were cooing away overhead.
I quickly grabbed the camera and was able to snap a photo
as they posed for a minute.

Just look at that vibrant blue sky in March....what a gift this is!

The pear tree is beginning to bloom for spring.
It's going to be a good season!
Everyday we are blessed with unexpected little gifts
and
I try never to miss them!
