SPINACH CORNBREAD STUFFED SUGAR PUMPKIN




Our little "punkin" Luke, will be joining us this year for Thanksgiving. I love having all three grandchildren together for the holiday since they are growing by leaps and bounds! Luke is in charge of decorating the children's table! Well...with a little bit of help from the Divine Miss M!

I thought of a really cute way to serve the "dressing" or "stuffing" (whichever term you prefer) to the children this year....all dressed up in a sugar pumpkin! This was my practice run and I think it turned out rather festive! And oh  honey....the aroma is fantastic! You know what, it would also be a sweet way to serve Thanksgiving dinner if it's just the two of you! The recipe was from Miss Sue in Pensacola. She is an amazing chef and baker. 



 SPINACH CORNBREAD STUFFED SUGAR PUMPKIN
1 (10 ounce) packages of frozen spinach, cooked and drained
2 cups of herbed stuffing mix (recommend Pepperidge Farm)
1 onion, finely chopped
5 eggs, beaten
1 1/2 t. dried thyme
3/4 cup melted butter
1/2 cup grated Parmesan cheese
2 t. garlic powder
pepper to taste



Mix all ingredients together in a medium sized mixing bowl. Wash your sugar pumpkin with a wet paper towel and pat dry. Cut the top off carefully and scoop out the seeds and some of the pulp. Rub the outside with olive oil. Preheat your oven to 350 degrees. F. Place the stuffing mix inside the pumpkin and place in a baking dish. Cover with foil. Bake for 30-45 minutes. Place the little top back on the pumpkin and you are ready to serve! The stuffing stays moist and has a marvelous taste from the pumpkin. It may be even better by adding some cranberries to the stuffing!

    Oh what a delightful recipe!

    -sigh- Thing is, yet again, I can't eat stuffin' because of needing G/F. -poooooh- -sob- -whimper- ,-) Not even my husband's family favorite Turkey Stuffin'.... Which he makes every year. No matter in which family house, the dinner is held.

    1. It's fun to see how creative you can be to serve something small and comforting in a pumpkin Vee! Yes, today is discharge day for little Luke! He was a sick little puppy, but thanks to a wonderful hospital, amazing healthcare providers, a skilled female surgeon, and many prayers, it's all good!
