FAVORITE CHUCK WAGON SALAD


RING THE DINNERBELL!

 

I know you are probably spending your summer days outdoors, playing hard and
working in your garden.
This is a wonderful summer dinner when you want to satisfy those little buckaroos
that show up at your dinner table about 6:00 PM!
 


 

 
Hey.......
I received "Two Thumbs Up" from ole' Duke!
 
 
Favorite Chuck Wagon Salad
2 lbs. ground chuck
1 20- ounce can tomato sauce
1 29- ounce can kidney beans, untrained
1 29- ounce can pinto beans, untrained
1 cup of diced yellow onion
1 4- ounce can diced green chilies
¼ cup diced celery
3 medium Roma tomatoes, chopped
2 t. cumin
2 T. chili powder
2 t. salt
Coarse ground black pepper, to taste
2 cups water

In a large Dutch oven, brown the ground chuck, and drain the grease. Brown the onion and celery. Add all remaining ingredients and bring to a boil. Reduce the heat. Cover and simmer to 3-4 hours, stirring often.
 
We made this like a "frito pie"....just layer your favorite lettuce combination with crushed tortilla chips, ladle the chili over this, sour cream, fresh avocado and top with shredded cheddar cheese! This is SO GOOD!!!!
 
 
Sometimes, it's the little things in life that you find make you smile.
 It doesn't get any better than receiving an unexpected grandbaby hug,
when a little boy finds "fun" in a pair of funny, green rubber teeth!

    1. You are so right Deanna! This is a little twist from the taco seasoned ground beef. The chili is not a heavy winter chili and not spicy. It was a hit with both children and adults!!! Hope you enjoy trying this! Thanks for stopping by today!
