FRENCH VANILLA CAKE INFUSED WITH STRAWBERRY JAM



This" bakery- made "Strawberry Cake was  my inspiration for today's recipe.
We celebrated our daughter-in-law's birthday while on vacation in August
and her sweet husband, our #1 son, special ordered this cake
from a local bakery called,  Oh Snap!
They did misspell her name, which we laughed about,
but oh honey, the taste and presentation was A+.

This cake was 'THE BOMB DIGGITY!"
Jenn wanted a strawberry cake and it was actually like no other
cake I had ever tasted. Most strawberry cakes have a batter made of up
strawberries and/or strawberry jello in the mix, but this was a delectable
vanilla cake with bites of what tasted like Strawberry jam throughout.
So, I decided to see what I could come up with to
recreate their masterpiece of a strawberry cake!


This was totally experimental.
I decided to choose a cake mix, French Vanilla
and about 1/3 jar of Strawberry Jam to see how it would turn out
before I went all out and prepared a made from scratch cake.
Oh, well.......success on the very first try....MARVELOUS!


I also wanted to try out my new autumn bundt pan 
from the Temptations line!


Prepare the cake mix according to package directions
but add 1 t. vanilla to the batter.
Pour 1/2 of the batter into a prepared pan.
Spoon tablespoons of jam throughout the batter.....


then swirl the jam throughout the cake.
Pour the remaining half of batter over all
and top with more dollops of jam.
Bake according to the directions.
Allow to cool before inverting onto a serving platter.
I sprinkled mine while warm, with powdered sugar.
You could choose to make a glaze if preferred.


I was very pleased with the results as the cake is marvelous....
Next time, I will experiment with more jam
and a white chocolate citrus glaze!


This is a keeper......cannot wait to bake another one!

  3. I will try this. It looks delicious and your Temptations pan is gorgeous (love QVC). I wanted to let you know that I have some of your two-ingredient cupcakes on hand right now. I used the canned pumpkin and a spice cake mix and they are SOOO good. So moist.

  5. Betsy, I really love the new cake pan...how very pretty....I think some things should be seen not put in a cupboard. Maybe use it for fruit on a counter. :):) The cake does indeed look yummy. I like the density of it. This may be your very own recipe. Blessings , xoxo, Susie

  6. Betsy, this reminds me of a Victorian Sponge! What a clever idea. I love anything strawberry and I still have a few jars of jam that I preserved this summer. Hmmmm, birthday coming up next month--maybe this will be my cake of choice! Happy weekend, XOXO

  8. This looks amazing. I experimented with my zuccinni bread recipe this week and now I need to write down the changes before I forget them, because I don't want to go back to the old recipe ever again :) Isn't it nice when experiments turn out delightful :)
