SAUSAGE FLATBREAD PIZZA


One word......DELICIOUS!!!!
No wait...maybe two words.....
SCRUMPTIOUS!!!!!


OK.....Y'all must try these.
We learned to prepare these healthy, delicious pizza's
through our HELLO FRESH experience 
and
they are going to be on the menu often now
whether it be for a light dinner or an appetizer.


SAUSAGE FLATBREAD PIZZA
Two flatbreads
1 zucchini
Fresh oregano
2 t. Italian Seasoning
3 Turkey or Sweet Italian Sausage links
1 can crushed tomatoes
1 cup mozzarella cheese
Olive Oil


Preheat oven to 350 degrees F.
Slice zucchini in 1/2 inch rounds.
Place zucchini in baking dish, drizzle with olive oil
and salt and pepper to taste.
In a separate oven proof baking dish,
pour crushed tomatoes.
Place zucchini and tomatoes in preheated oven
and roast for 30 minutes.

While veggies are roasting,
brown sausage (casings removed) in a drizzle of olive oil.
Sprinkle with fresh oregano.
Cook until browned, and no longer pink
for about 6-10 minutes.
Remove saucepan from heat.

To assemble the pizzas,
place flatbreads on baking sheet.
Remove veggies from oven.
Spread a layer of crushed tomatoes on tops
of flatbread.
Sprinkle with Italian Seasoning, salt and pepper.
Scatter shredded mozzarella, then
follow with sausage and roasted zucchini slices.
Top with remaining mozzarella.
Bake at 350 degrees f.
until cheese has melted for about 10 minutes.


Scatter fresh oregano over baked pizzas;
slice flatbreads into slices and you are ready to serve!

MEMORIAL DAY HIGHLIGHTS

Hi everyone...
I do so hope you enjoyed your holiday weekend.
These are a few everyday living moments in 
Atlanta and in Texas.


The Divine Miss M stopped in at Costco
for a rotisserie chicken and.....
well you know how a little time spent in Costco ends up.....


Just look at these delicious Strawberry- Rhubarb pies.


In fact, Luke the Duke was treated to a 
first morning of summer vacation with pie for breakfast.


The family enjoyed an evening out to dinner
and then a minor league baseball game.


Our Nick and Catherine enjoyed a date night
at an upscale Ft. Worth restaurant....
in fact, the same one he proposed at.


We planned a day of sunning by the pool
while the pit masters smoked a brisket,
but the day was hot, humid and overcast.


Bo managed to be the only one in the pool
and then enjoyed his little cabana to keep
his Daddy in good company while tending to the smoker.

We enjoyed a great few days with Rob
who had a few days off and drove up from Austin.....
he and I did a shopping trip and I sent
him home with a new crockpot and new kitchen tools..
his Mom (me) is determined to turn him into a home chef!


We had all enjoyed a weekend of cooking, eating,
shopping and a few movies, so when Sunday evening
rolled around, we decided to try an evening out to dinner.


We thoroughly enjoyed Lazy Dog....
the outdoor patio is reserved for 
people who bring along their four-legged fur babies.


Oh, how I love a Texas themed dining spot!

A great ending to a lovely holiday weekend.

SOUTHERN PEACH COBBLER


Yes, you CAN have a peach cobbler in spring...
ALMOST as good as a peach cobbler in summer...
you know the cobbler created with all those fabulous fresh summer peaches!
And, you can substitute CANNED peaches for the fresh variety!
I promise you, it's gonna knock your socks off!


SOUTHERN PEACH COBBLER
1 (29 ounce) can of sliced peaches 
2 T. sugar
2 t. cinnamon
1/2 t. nutmeg
1 t. vanilla

Bring all of these ingredients to a boil in a medium saucepan.
Allow to simmer for 5 minutes.
This makes a beautiful syrup.

For the batter.........
In a separate mixing bowl.
mix together
1 cup flour
1 cup sugar
1 t. baking powder
1 cup milk
1 T. melted butter

Blend all these ingredients together
and set aside until ready to
pour over melted butter.

In a baking dish, melt 1 stick of butter 
in a preheated 350 degree oven.
Remove from the oven,
and spoon peaches and most of syrup over melted butter. 
pour batter over the peaches. Do not stir.
Reserve remaining syrup.
Bake for 45 minutes.
Allow to cool slightly before serving.
Serve with vanilla ice cream
and spoon some of your reserved peach syrup over all. 


This is going to be great!

WEDDING BELLS ARE RINGING IN WASHINGTON D.C.


The Divine Miss M and husband, Jay
enjoyed a whirlwind few days 
in our states capital.
Jay's college roommates' daughter
was saying her 'I DO'S'
at The St. Regis in D.C.


Upon arriving, they spent
the afternoon touring the city
seeing as much as they could manage in such a short time.
